Tasting Notes

Honeysuckle; lemon cider; white grape soda; grapefruit zest; fresh ginger

We've been searching for a coffee that is not Step 1, but Step 2 in a coffee lover's journey, and this is it. From the heartland of coffee, we present to you something both familiar and unique. Packed with zing and juice, this White Honey jumped out at us the moment we tasted it. Bubbly, citrus soda is accented with zest and rose - add a honeysuckle sweetness to keep that brightness in check, and welcome to Ethiopia. This is perfect when you need a coffee to wake you up not just from caffeine but from flavor too. 

The Farm

For close to a decade now, the Swift coffee team has worked directly with Hirut and Mahder Berhanu. Their washing station/exporting company is reliably excellent, and their staunch approach to community is to be admired. Recently opening up a clinic and library, they are working on a daycare facility at their washing station too.

This gets to how this coffee was created - over 200 smallholder farmers from their tight region - most from extremely small family plots - have their coffee processed by the Berhanu's.

One of the more demanding methods of processing coffee, White Honey is pulped very closely, with just a thin layer of mucilage left on the bean to ferment. After fermentation, "parchment" coffee is directly moved to shaded drying beds, until reaching targeted dryness. On the spectrum of Natural, this style of Honey is as close to Washed as you can get, leading to a wonderfully bright and and crisp cup that still retains the sweet juiciness of Naturals.

Fun Fact: the wonderful folks we sourced this from, PDX legends Swift Coffee, were one of the first to advocate for Honey process in Ethiopia. Some of the most on-the-ground, hands on coffee exporters you can find, we are extremely excited to begin offering coffee from them.

The Cup

Zingy, zesty, bright... this is an extroverted coffee. Excellent iced as well, this is a wonderful introduction to honey process coffees.
