Tasting Notes

Baking Chocolate · Black Tea · Wine · Prunes
Rosemary

A star in Colombian coffee, Andrés Cardona is an innovator and mentor who shares and educates the next generation of growers. This Black Honey Castillo is an excellent example of his style, with a complex process only he could produce consistently. This unusual double fermentation process delivers a coffee most of us assumed was a luxury Gesha, with uniquely herbal and wine notes creating a coffee that makes you point your pinky out while sipping.

The Farm

One of the farmers on the mentoring side of Unblended, Andres Cardona's Finca La Ilusión is located outside of Medellín. His estate has become a processing center supporting younger, growing farmers as well as his own experiments. We are extremely excited to partner with one of the most innovative farmers and exporters out there.

The Cup

A beautiful introduction for those wanting to drink a different style than their normal routine, expect a coffee capable of tasting significantly different from hot to cold. Sweet wine, fancy chocolate bar, even a date syrup can be found in this stellar coffee from one of Colombia's best growers.

Brewing Recommendations

A cup with plenty of complexity, I recommend starting with a 1:18 ratio - a bit more water than you might generally brew. Wonderful in many forms, I actually enjoyed this on French Press quite a bit as well.
