Likely the most recognizable region in Ethiopia, Yirgacheffe’s fame is entirely warranted for both their flavor profile and consistency. Located in the heart of Yirgacheffe, the Gideo Zone, Birkutan farms a small, 2.5 hectare plot. She presents us with a coffee that is classic for the region; a natural process, high elevation, landrace packed with florals, cola sweetness and grapefruit acidity to balance out. Enjoy one of the most special regions in all its glory.

The Farm

Located in the heart of the infamous Yirgacheffe region, Birtukan farms a small 2.5 hectare plot in one of the very best places in the world for growing coffee. The processing for this particular lot is a traditional natural process - cherry is inspected for consistency, washed clean, then immediately moved to a raised drying bed. A drying period of 10-15 days is completed before being sent to the washing station for final processing.

The Cup

Being a natural process coffee, there’s a whole bouquet of fruit on both the nose and palette, including the now well-known Ethiopian notes of grape, blueberry, and mandarin. Balance those notes with black tea, peppercorn, and cinnamon, and you understand why Yirgacheffe has the reputation it carries.

Brewing Recommendations

This particular bean follows suit with most Ethiopian, in that it is both smaller and more dense than usual the world average. Add the fact it's a lightly roasted coffee, we would definitely recommend brewing a bit hotter and grinding a bit finer. For your coffee:water ratio, lean towards 1:18 or even 1:19 ratio for pourover/drip. Personally I wouldn't put this on espresso but you acid juice bomb lovers out there, have a blast.
