A young, up and coming producer, Cornelio is doing at 28 what generally takes decades to hone — developing difficult cultivars at extreme altitudes, and processing them in complex (and delicious) ways. His crop has been pre-sold out for the last 2 years, so we're very excited to bring you this coffee. This particular lot is Gesha Inka, a Peruvian specialty originating from Cornelio's hometown of Inkawasi. Using a washed, twice fermented process, expect a silky, dense coffee absolutely covered in tangerines, honey, a bouquet of sweet florals, and a vibrant citrus acidity the whole way through. 

 

The Farm

Cornelio's farm, Alto Capasi in Inkawasi, runs an incredibly special estate. Focusing on more exotic varieties, the luxury (and challenge) of being at 2330 MASL gives him all the essentials to churn out top quality coffee. Pair that with a knack for unusual processes and you've got a winning farm on your hands.

The Cup

Absolutely brimming with sweetness and different florals, there's a whole world to be discovered inside of this incredibly unique coffee. While it certainly leans on a combination of mandarin, orange blossom, and lemon verbena, different brews will bring out gardenia, orange peel, even peach.

Brewing Recommendations

A relatively easy brew to balance, I'd recommend leaning towards 1:18 at 200 temp and go from there. If you're feeling wild I would definitely recommend turning this into ice coffee, going with a 1:11 or 1:12 ratio and adding ice.
